What's for lunch that's what I want to know...

One of my New Years' Resolution (like many) that have not been done, was to eat at home and also to eat healthy. So I decided to challenge myself and start to photograph what I eat and drink in a day.. So that way I can start to see what I consume in a day, good and bad, plus get better at shooting food and try to come up with creative ways to cook and photograph food.

So I need your help... I am a horrible cook. Any recipes that you can pass along that is easy, please do.

I only hate mushrooms, sausages and baked shrimp....

Calling all Emerils'.. Come in Emeril

How about Goya yellow rice, a cut up tomato, some fried onions, other vegetables that you like (I use mushrooms, which I know isn't an option) and left overs from the fridge. I typically cut up the remainder of the rotisserie chicken from the night before. I am not sure if it is healthy, but it is good.

As for drinks - I am drinking more and more seltzer (try Polar, you can taste the difference) and unsweetened iced tea. Brew the tea yourself - you can taste the difference there too!
